Saint Aubin "Les Pucelles" 2011 Debray
Domaine Debray is a large wine-growing estate in the Côte de Beaune area. The Domaine’s main goal is to produce quality wines, that express to the fullest the characteristics of the soils. The vineyards are worked upon with the utmost respect for the environment and for the vines themselves, and the grapes are picked manually and carefully sorted before the wine-making process begins.
When young, Saint Aubin combines aromas of white flowers, flint, green almond, and orange-flower. Richer fragrances come with age: beeswax and honey, marzipan, ambergris, and cinnamon. A bit sharp to start with, this wine becomes fleshier and fuller with time. Firm-textured fish and grilled or steamed crustaceans would be a good match. It would also make a perfect finishing touch to dense-fleshed poultry.
